Zucchini, Corn and Mint Fritters

INGREDIENTS:

3 large zucchini

1 small can corn

2 tablespoons sesame seeds

2 tablespoons sunflower seeds

small handful of fresh mint leaves, finely chopped (or 1 tea bag)

2 cloves garlic, squeezed through garlic press

1 cup flour

salt, pepper

oil

 

PREPARATION:

Grate zucchini, put in colander and sprinkle with salt (this will cause zucchini to ooze its liquid) and allow to rest for an hour. Squeeze out remaining liquid.
Put zucchini in a bowl with corn, mint, garlic, flour, sesame, sunflower and a pinch of pepper. Mix everything with your hands until you can form balls. At first it may seem dry, but that's why it's important to stir until well combined.
Heat oil in a pan. Form small balls, put them on the pan and flatten into patties.
Fry over medium-high heat until for 3 to 5 minutes until golden-yellow on both sides.
