Veggie Burger

INGREDIENTS:

2 tablespoons olive oil, 2 tablespoons apple cider vinegar

2 cloves garlic, chopped

1 small eggplant, sliced into disks

1 yellow bell pepper, cut into rings

1 big red bell pepper, sliced

salt, pepper

8 big spinach or green lettuce leaves

1 big tomato, sliced

4 whole wheat buns

 

PREPARATION:

In a small bowl, whisk together the oil, vinegar and garlic. Pour over the vegetables and let marinate, then grill or pan-fry for 5-6 minutes per side.
You can toast the buns, cut-sides down, for a few minutes. Place a patty in the middle and top with the marinated veggies, lettuce and fresh tomatoes in any order you like.
