Burdock Risotto

INGREDIENTS:

2 cups of chopped onions

2 cups of grated burdock root

3 cups of cooked rice

2-3 cups of oil

salt, parsley

 

 

 

 

 

 

PREPARATION:

Simmer the onions in oil until they become clear; add the burdock root, a little bit of water and a pinch of salt. Cover it and let it simmer for 15-20 min, add the cooked rice, some water and cook it covered until the burdock becomes soft. At the end add some more salt and cook for 2-3 min.
Just before serving sprinkle it with chopped parsley.
