Broccoli and Cauliflower Soup

INGREDIENTS:

1 tablespoon of olive oil

50 g of onion

100 g of broccoli

100 g of cauliflower

50 g of carrots

1 l of water

50 ml of tomato puree

Salt, Pepper

 

 

PREPARATION:

Briefly simmer chopped onions in olive oil. Add broccoli and cauliflower flower heads and diced carrots, and simmer everything for 5-10 minutes, adding water when needed. Add tomato puree and 1 l of boiling water. Add salt and pepper, stir and cook in a half covered pot on low heat for about 15 minutes. Sprinkle with parsley and serve warm.
