Sunny Soup

INGREDIENTS:

300 g pumpkin, cut into chunks

½ cup oat flakes

1 red onion

½ tsp salt

½ tsp nutmeg (powder)

½ cup soy cream

pumpkin seeds, basil and green onion for decoration

1 tbs olive oil

 

 

PREPARATION:

Sauté finely chopped red onion in olive oil. Add pumpkin, oat flakes and enough water to cover all ingredients. Bring to a boil, then lower the heat and cook covered over low heat for 10 minutes. Mash cooked pumpkin and flakes in a colander. Put the mash back in the pot, add 6 cups of warm broth or water, stir in soy cream, add salt and nutmeg, and cook for 2-3 minutes. Decorate with pumpkin seeds, basil and green onions.
